ABOUT THIS COFFEE

The dogs have caught the Geisha! This newest limited edition from The Naughty Dog roastery is a reminder of why Geisha is considered the queen of coffee varieties — a cup overflowing with elegant florals, refined sweetness, and remarkable clarity.

From the very first sip, you’ll find a lively, sparkling acidity wrapped in signature Geisha aromatics: jasmine in full bloom, delicate rose petals, and a soft vanilla glow. The finish lingers with the gently aromatic character of Earl Grey tea, giving the cup a silky, soothing body.

ABOUT THE VARIETY — GESHA

Gesha is one of the most coveted varieties in the specialty coffee world. Originally discovered in the forests around the Ethiopian village of Gesha, it only became famous decades later when Panamanian producers began cultivating it at high elevations.

Gesha is now known globally for its unmistakable floral profile, tea-like structure, and stunning clarity. Typical tasting notes include jasmine, bergamot, white florals, and stone fruit — and this Tolima-grown Geisha from producer Aristobula Raya is a shining example of those qualities expressed through Colombian terroir.

ABOUT THE PROCESS — WASHED

This coffee is processed using the washed method — a technique that highlights the bean’s intrinsic flavors and terroir.

  1. Selective Picking — Only fully ripe cherries are harvested to ensure maximum sweetness.

  2. Depulping — The fruit skin and most of the mucilage are removed using a mechanical depulper.

  3. Fermentation (24 hours) — Beans rest in concrete tanks where natural fermentation loosens the remaining mucilage.

  4. Rinsing & Washing — The coffee is thoroughly washed to achieve a clean, tea-like profile.

  5. Drying (3–6 weeks) — Beans dry slowly on raised African beds, allowing sugars to stabilize and complexity to develop.

The result is a refined cup with a delicate structure, bright acidity, and layered floral sophistication.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
