Finca Voo – Costa Rica (Natural Catuai, Experimental Category Winner)
An exceptional natural Catuai from Finca Voo, awarded 1st place in the Cup of Excellence 2024 – Experimental Category. This lot defies expectation – tasting more like a bright, floral African coffee than a typical Costa Rican natural. Expect notes of currants, honeydew, and delicate florals, all wrapped in a clean, structured cup.
Cherries were selectively harvested and fermented in sealed dark plastic bags for 36 hours before being dried on raised African beds for 19 days. During the hottest hours, beds were shaded with plastic nets – a drying technique borrowed from Ethiopia to enhance uniformity.
Located in Copey, Tarrazú, Finca Voo is run by Ivan Solis and family – the team behind Beneficio Santa Fe. Flavour Notes: White Currants, Honeydew, Citrus Flowers
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
