INTRO

From Darío Rodríguez at Finca El Recreo in Gigante — a washed Pink Bourbon of remarkable clarity and rich body from a producer who has been cultivating the land since 1975. A 40-hour fermentation develops the fruit-forward complexity and structural depth that make this an exceptional espresso. In the cup: orange, apricot, and raspberry.

THE PRODUCER

Darío Rodríguez has been farming Finca El Recreo in Gigante, Huila since 1975 — half a century of dedication to the land that speaks directly in the cup. His farm sits at 1,670 MASL in one of Colombia's most celebrated coffee-growing regions, where the volcanic soils, stable mountain microclimate, and cool temperatures of Gigante provide ideal conditions for Pink Bourbon to develop the vivid fruit character and refined sweetness that define this lot.

Pink Bourbon is a variety grown primarily in Huila, genetically identified as Ethiopian Landrace and belonging to the Core Ethiopia group alongside Gesha, Chiroso, Sidra, and Aji. Prized for its bright, sweet, and aromatic profiles, it responds particularly well to a carefully controlled extended fermentation — the 40-hour protocol Darío applies here building the orange and apricot fruit clarity and raspberry brightness that define this cup.

THE PROCESS

The Washed process at Finca El Recreo involves:

🍒 Hand-picking — Pink Bourbon cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 40-hour fermentation — Beans fermented for 40 hours — an extended period that develops remarkable clarity and aromatic depth while building the rich body that makes this particularly well-suited to espresso 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried to optimal moisture content

The 40-hour fermentation is the defining step — an extended fermentation managed carefully over nearly two days builds the layered fruit complexity and structural richness that define this lot, while the thorough washing after fermentation preserves the clean, well-defined clarity that allows every note to emerge with precision as an espresso.

THE CUP

A fruited, structured, and remarkably clear washed Pink Bourbon espresso from one of Gigante's most experienced and longest-serving producers — orange brightness, apricot sweetness, and a raspberry vibrancy in a rich, clean cup with the body and clarity that fifty years of farming in Huila produces. Darío Rodríguez at Finca El Recreo, in every shot.

About this variety

Pink Bourbon, also sold as Rosado, is often chosen for a bright, floral and fruit-forward cup. Tropical fruit, citrus and stone fruit are useful reference points, but the lot’s own notes should lead.

Why this one is different
  • Colombia
  • Huila
  • 1670 masl
  • Washed

Colombian Pink Bourbon often feels perfumed and lifted, with orange blossom, rose, bright citrus, peach or tropical fruit and a silky, tea-like finish. The reviewed coffees range from clean washed lots to naturals and co-ferments, where processing can push the cup towards candy, spice or deeper fruit. The producer's tasting notes are the best guide to this particular bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Pink Bourbon, also called Rosado, became prominent through Colombian specialty producers and is now grown across several regions. The reviewed selection shows why it is sought after: even with very different processes, floral aromatics, lively fruit and a refined texture appear repeatedly.

Identification note Pink Bourbon or Rosado is a widely used Colombian name, but genetic testing shows it is not Bourbon. Some tested lots also contained mixed plant material, so the producer's identification remains important for each coffee.

Classification Reported cultivar

Technical lineage Recent genetic testing places tested Pink Bourbon material with Ethiopian landrace coffee rather than the Bourbon family. The familiar name is retained because it is the name used by producers and roasters.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
