INTRO
It's finally ready, after some frustrating profiling. A dynamic cup that pushes and pulls in many directions, from shockingly bright and bitter to velvety soft and sweet, and one that will change quite a bit over time, so give it plenty of rest. In the cup: yuzu, marshmallow, and green mango.

THE PRODUCER
Café Ticuna grows this Tabi at El Mirador in Suaza. The page gives no further producer background.

THE PROCESS
This lot is Washed, a method that removes the fruit before fermentation and drying. The page doesn't give further steps.

THE CUP
Dynamic and contrasting: a bitter, tart yuzu acidity against pillowy, sugary marshmallow sweetness, with green mango, and resinous pine needle in the lingering, slightly piney finish. The balance is good, and the roaster describes it as a curious cup that opens up with rest.

Coffee Variety

In this coffee

Dynamic and contrasting: a bitter, tart yuzu acidity against pillowy, sugary marshmallow sweetness.

  • Green Mango
  • Yuzu
  • Marshmallows

About this variety

Tabi is capable of a sweet, balanced and lively cup. Fruit and caramel-like sweetness are useful broad references, while the specific lot notes should lead.

Why this one is different
  • Colombia
  • Suaza
  • Washed

In Colombia, Tabi is a composite variety rather than one genetically identical plant line. Producer and regional traceability remain important.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Tabi is a tall Colombian cultivar group released by Cenicafé in 2002. It was developed for coffee leaf rust resistance while retaining useful production, bean and cup-quality characteristics.

Classification Colombian cultivar group

Technical lineage Selections derived primarily from Timor Hybrid crossed with Typica and Bourbon.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
