INTRO
This is the latest in the year SEY has ever received a harvest delivery from Urrao, and it comes from David Berrio. The quality has matched the occasion. In the cup: nectarine, passion fruit, and honeysuckle.

THE PRODUCER
David Berrio's farm, La Casita, is the most remote site SEY works with in Urrao. At 1.5 hectares (about 3.7 acres), it is more a garden than a farm, perched at extreme elevation and producing some of the most dynamic and expressive examples of Chiroso SEY tastes each year. Urrao remains difficult to access, and SEY has found a way in via an avocado transport plane.

Chiroso is a new variety grown primarily in Antioquia, genetically identified as an Ethiopian landrace, though where and how it came to be cultivated in Urrao remains unknown. SEY has built a buying programme in Urrao around it, with its exporting partner The Coffee Quest.

THE PROCESS
The Washed process for this lot involves:

🍒 Hand-picking — cherries picked at peak ripeness
💧 Floating — floated to further remove defects
🌙 In-cherry hold — held in-cherry for 24 hours
🐴 Transport — by horse to the main road, then by car to the house and mill
🌱 De-pulping — cherries de-pulped
🛢️ Cochadas fermentation — fermented underwater in stainless steel tanks, with coffee added to the tank throughout the week and washed together on Monday
☀️ Drying — until moisture reaches 10.5%

THE CUP
Dynamic and expressive: nectarine and passion fruit lead, with a honeysuckle finish.

About this variety

Coffees reported as Chiroso are often associated with an aromatic, tea-like and bright cup. Florals, citrus and stone fruit are useful reference points in carefully produced lots.

Why this one is different
  • Colombia
  • Antioquia
  • 2100 masl
  • Washed

Colombian Chiroso is often bright and aromatic, bringing white flowers, citrus, red fruit and a tea-like or gently herbal finish. The reviewed washed lots from high elevations are especially clear and lively, while natural processing can make the fruit rounder and more expressive. Look to the listed process for the clearest clue to this bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Chiroso gained attention through producers around Urrao in Antioquia and is now seen in other Colombian regions. The reviewed coffees still lean strongly towards high-grown, carefully washed lots, where florals and vivid fruit stay sharply defined.

Identification note Chiroso is a Colombian producer name with strong genetic evidence linking tested material to Ethiopian landraces. Individual farm plantings are not assumed to be genetically identical unless their traceability confirms it.

Classification Colombian regional name

Technical lineage Published genetic research places tested Chiroso in an Ethiopian-only landrace cluster, rather than supporting the older idea that it was simply a Caturra mutation.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
