INTRO
Chelbesa Danche is practically a household name in specialty coffee, and this lot is about as clean and fruity as it gets: classic washed Ethiopian coffee. In the cup: orange and tart cherry, with a hint of pineapple, grape, and raspberry, and aromas of rose and powdered-sugar blueberries.
THE PRODUCER
The coffee is named for the Danche washing station where it's produced. Approximately 800 farmers deliver their cherries to the station, each farming 2–3 hectares at 2,200 metres.
THE PROCESS
The Washed process for this lot involves:
🍒 Selective picking — only ripe cherries picked
💧 Floating — floated to remove defects
🌱 Pulping — cherries pulped
⏱️ Dry fermentation — 96 hours
🚿 Washing — fully washed
☀️ Raised-bed drying — 12–14 days
The long 96-hour dry fermentation followed by a full wash is the defining step. It gives the lot its clean, layered fruit.
THE CUP
Clean and fruit-forward: layered orange and tart cherry, with hints of pineapple, grape, and raspberry, and a rose aroma.
