INTRO

From Juan Jiménez at El Porvenir — the same 16-hectare farm in Palestina that has produced some of Huila's most celebrated Pink Bourbon lots, now delivering a small and excited-about batch of Gesha. A second-generation farmer with over 40 years of experience, Juan's expertise is as evident in this Gesha as it is in the varieties that first earned him his reputation. Ultra-light and expressive. In the cup: sweet tea, orange, almond, and rose hip.

THE PRODUCER

Juan Jiménez is a second-generation coffee producer who has been cultivating coffee at El Porvenir in Palestina, Huila for over 40 years. His 16-hectare farm has become well known in specialty coffee circles through his Pink Bourbon lots — an early investment in the variety that earned him recognition and competition awards before Pink Bourbon became as widely celebrated as it is today. The Gesha on this release is a small batch from the same farm, processed with the same meticulous attention to washed processing and multi-stage fermentation that defines his approach across all varietals.

Gesha, first collected from the coffee forests of Ethiopia in the 1930s and brought to global prominence at the 2005 Best of Panama competition, finds ideal conditions at 1,800 MASL in Palestina's cool highland microclimate — where slow cherry maturation and the distinct terroir of southern Huila allow the variety's hallmark florality and delicate complexity to express themselves with full elegance.

THE PROCESS

The Washed process at El Porvenir involves:

🍒 Hand-picking — Gesha cherries selectively harvested at peak ripeness 💧 Flotation — Floated to remove defects before processing ⏳ In-cherry hold — Whole cherries held overnight before de-pulping 🔧 De-pulping — Outer skin removed the following day 🧪 Dry fermentation — Dry-fermented for 48 hours 💧 Washing — Thoroughly washed after fermentation to remove all residue 🏚️ Parabolic greenhouse drying — Dried for 18–22 days in a parabolic-style greenhouse dryer ☀️ Raised-bed finishing — Finished on raised beds to optimal moisture content

The two-stage fermentation and parabolic greenhouse drying are the defining steps — the multi-stage washed protocol builds the delicate sweet tea and orange clarity and almond warmth that define this lot, while the greenhouse drying preserves the rose hip florality and refined structure that run through to a long, clean finish.
