INTRO
This lot continues SEY's exploration of Santa María in Huila, and it is their first year working with Luz Rivera. In the cup: raspberry, citrus, and wildflower honey.
THE PRODUCER
The lot was shown to SEY by their exporting partners in Huila, and Luz Rivera's coffee was among the higher-scoring lots from the samples received this year. SEY knows very little about her yet and looks forward to visiting her farm and learning about her process next season.
Pink Bourbon is a relatively new variety grown mainly in and around Huila. It has been identified genetically as an Ethiopian landrace, but nothing more specific is known until there is a larger genetic database.
THE PROCESS
The Washed process for this lot involves:
🍒 Hand-picking — cherries harvested at peak ripeness
💧 Floating — floated to further remove defects
🌙 In-cherry hold — held in-cherry for 24 hours
🌱 De-pulping — cherries de-pulped
⏱️ Dry fermentation — dry-fermented for 48 hours
🚿 Washing — washed clean after fermentation
☀️ Raised-bed drying — dried on raised beds until moisture reaches 10.5%
THE CUP
Bright and sweet: raspberry leads, with citrus through the middle and a wildflower honey finish.
