About the Producer and Coffee

José Luttrell is the producer behind Abu Coffee, a family-owned boutique farm in the Cañas Verdes region of Boquete, Panama. Named in honor of José’s grandmother, “Abu,” the farm embodies a deep respect for nature and community. José has focused on creating an innovative coffee project centered on sustainability, precision processing, and exceptional quality. Abu Coffee has quickly earned international recognition, including at the Best of Panama competitions, for its meticulous approach to the Gesha variety. The farm’s location at 1,550 meters above sea level on the slopes of Boquete benefits from nutrient-rich volcanic soils, cool mountain air, and abundant spring water, providing an ideal terroir for producing elegant, high-quality Gesha coffee.

Processing

This coffee is processed using a submerged washed method. Cherries are hand-picked at peak ripeness and carefully selected before being pulped. They then undergo an anaerobic “dry fermentation” for 42 hours in sealed GrainPro bags submerged in fresh mountain spring water. After fermentation, the coffee is fully hand-washed and dried on raised beds for 15 days, ensuring clarity, balance, and the refined character of the Gesha variety.


In the Cup

The coffee offers a refined, elegant cup with bright, tea-like qualities and delicate floral notes. Expect a soft, lingering sweetness that accentuates the varietal character of Gesha.

 

Result

A clean, vibrant, and expressive Gesha with layered complexity—notes of bergamot, peach, and Earl Grey—perfectly showcasing Panama’s unique terroir and Abu Coffee’s meticulous processing.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.


What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Manhattan coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
