It’s back. One of DAK’s favourites, the unmistakable Macaron—a natural Red Bourbon from Jhoan Vergara at Finca El Diviso. This limited lot bursts with strawberry jam, raspberry macaron, and buttercream. It’s rich, playful, and intensely expressive. Small batch now, more to come soon.

DAK is thrilled to showcase another beautiful lot from Jhoan Vergara, produced at Finca El Diviso in Huila. El Diviso is a collaboration between two family farms—El Diviso (Nestor and Adrian Lasso) and Las Flores (Jhoan Vergara)—just outside Pitalito. Together, these three young producers are elevating quality through shared knowledge and innovation.

This Red Bourbon follows a precise post-harvest process:

  • Manual harvesting of ripe cherries

  • 40-hour fermentation in plastic bags at 16–18°C

  • 20-hour oxidation phase

  • 12–18-hour anaerobic fermentation

  • Washed with hot water for thermal shock

  • Solar-dried for 16–25 days, weather dependent

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
