Danche – Ethiopia (Washed)
DAK is celebrating the arrival of the first washed Ethiopian of the 2025 season – and it’s a beautiful start. This lot from Danche Washing Station is delicate, tea-like, and floral, with crisp citrus notes and a bright, refreshing finish. A perfect way to welcome summer.
Danche is located in Chelbesa, Gedeo, and is managed by DAK’s long-term partners, SNAP COFFEE. The station is organically certified and sources cherries from around 400 smallholder farmers. Farms here sit between 2,000–2,300 masl, with rich soils and excellent agricultural practices contributing to consistently high-quality yields.
The altitude and later harvest season allow for slower cherry maturation, resulting in a particularly refined cup. Expect clarity, complexity, and a light, elegant structure – a classic expression of southern Ethiopia.
Flavour Notes: Black Tea, Citrus, White Flowers
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
