Java – Colombia (Thermal Shock Washed, Espresso)

This lot comes from Jhoan Vergara at Finca Las Flores in Huila, sitting at 1,750 masl. A washed Java, processed using a thermal shock technique that enhances clarity, body, and structure.

Expect vibrant lime-kefir acidity, balanced by ripe fig sweetness and a delicate, meringue-like finish. A refined and expressive espresso, driven by precision processing and variety selection.

Thermal shock involves rapid temperature shifts during washing, which helps preserve the coffee’s volatile aromatics while improving mouthfeel – a method increasingly used by progressive producers like Jhoan to push the boundaries of washed coffee profiles.

Flavour Notes: Florals, Lime Kaffir, White Chocolate

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
