THE CUP

Vibrant and expressive. Ripe tropical fruit, hibiscus, and citrus notes of orange and limeade, with delicate rose florals and a refined white sugar sweetness. High intensity, clean structure, and a long, sweet finish.

THE PRODUCER

Born and raised in San Agustín, Reinaldo began farming at age 9 and planted his first Pink Bourbon trees in 2016. Alongside his wife Doña Mariela, he has expanded El Paraíso into a 6-hectare farm with 4 under coffee. After years of selling without traceability, he joined the Monkaaba project this year, proudly delivering his first micro-lot under his own name — a milestone in his lifelong dedication to coffee.

THE PROCESS

Cherries are picked at peak ripeness every three weeks, then fermented for 24 hours. After depulping, seeds undergo another 24-hour fermentation with pulp from the prior day’s picking. Finally, the lot is washed and dried for 15–20 days in controlled drying rooms for stability and sweetness.

What is the roast recency?

Ilse doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Ilse typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
