ABOUT THE COFFEE

This Sudan Rume lot from Inmaculada Coffee Farms represents the perfect intersection of rare genetics and precision processing. Grown in the fertile highlands of Cauca, Colombia, this ancient Arabica variety — one of coffee’s purest genetic lineages — is known for its aromatic intensity, elegant acidity, and complex sweetness.

For this microlot, cherries were hand-picked at peak ripeness and underwent a 23-day natural anaerobic process, where fermentation took place in sealed tanks to enhance fruit character and clarity. The cherries were then dried slowly on raised beds, allowing sugars to concentrate and deepen the cup’s tropical profile.

THE CUP

The result isa clean, fruit-forward coffee that bursts with tropical vibrancy. Layers of papaya, pineapple, and tangerine are balanced by a rich brown sugar sweetness and subtle floral undertones. The cup is medium-bodied and juicy, with refined acidity and a lingering, crystalline finish that showcases both the precision of Inmaculada’s processing and the inherent beauty of the Sudan Rume varietal.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
