DETAILS

  • Producer: Dwight Aguilar
  • Farm: Nueva Alianza
  • Region: Santa Teresa, La Convención, Cusco, Peru
  • Varietal: Pacamara
  • Process: Washed
  • Altitude: 1,820 masl

INTRO From Dwight Aguilar's Nueva Alianza farm in Santa Teresa, Cusco — a Pacamara that lets the variety's famously large genetic profile speak clearly. Jasmine florality leads, with lime brightness and a warming ginger spice running throughout, all built on the tight structure and expressive depth typical of Santa Teresa's terroir. In the cup: jasmine, lime, and ginger.

THE PRODUCER Nueva Alianza is a family farm born from the Dwight family's collaborative spirit and their drive to produce exceptionally high-quality lots. Located in Cusco's La Convención province, in the Santa Teresa district, the farm sits at 1,800–1,900 masl, benefiting from a climate, sandy soils, and rich organic matter that create an ideal ecosystem for coffee production. Nurtured with patience and precise technique by Dwight Aguilar, this lot allows Pacamara's substantial genetic complexity to fully express itself.

THE PROCESS This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Pacamara's large-format complexity and structure to come through with clarity, building the jasmine, lime, and ginger character that define this cup.

THE CUP Hot, it opens with lemongrass, jasmine, and ginger. Warming, tangerine, jasmine, and honey emerge. As it cools, apricot, lemon tea, and ginger appear, finishing long with lemon tea and ginger. The acidity is complex, citric and malic; the sweetness high, like honey and ginger; and the mouthfeel full yet delicate.

About this variety

Pacamara can be highly aromatic and more full-bodied than many delicate varieties. Ripe fruit, florals and spice are common reference points in high-quality lots.

Why this one is different
  • Peru
  • Cusco
  • 1820 masl
  • Washed

This Pacamara is from Peru. Farm selection matters because Pacamara plants can vary within the wider population, changing both structure and flavour.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Pacamara was developed in El Salvador by crossing compact Pacas with very-large-beaned Maragogipe. It is capable of exceptional quality, but the population is not completely uniform or stable.

Classification Salvadoran cross

Technical lineage Pacas × Maragogipe.
