INTRO

From Andres Torre Ore at Finca Muruhuay โ€” a farm situated where the Andes meet the Amazon, in one of Peru's most distinctive and transitional growing environments. A balanced, beautifully drinkable washed Caturra and Bourbon that Onyx love precisely for what it is: honest, expressive, and deeply satisfying. In the cup: grapefruit, milk chocolate, allspice, and red currant.

THE PRODUCER

Andres Torre Ore grows coffee at Finca Muruhuay in a growing environment that is genuinely unlike most of Peru's established specialty regions โ€” the transition zone where Andean altitude gives way to the Amazonian lowlands, creating a microclimate of unusual warmth, humidity, and biodiversity. Through thoughtful farm management and years of accumulated experience, Andres has developed the knowledge and craft to produce coffees that showcase the unique character of this remarkable and underrepresented growing area.

Caturra, a natural Bourbon mutation first identified in Brazil, and Bourbon, one of the oldest and most historically significant Arabica varieties in the world, have been grown in Peru's highland regions for decades. In Andres's hands at 1,540 MASL, where the Andes and Amazon converge, they deliver the balanced, juicy, and structured profile that Onyx specifically prize from Finca Muruhuay.

THE PROCESS

The Washed process at Finca Muruhuay involves:

๐Ÿ’ Hand-picking โ€” Caturra and Bourbon cherries selectively harvested at peak ripeness ๐Ÿ”ง Depulping โ€” Outer skin removed before fermentation ๐Ÿงช Fermentation โ€” Beans fermented to break down remaining mucilage ๐Ÿ’ง Washing โ€” Thoroughly washed to remove all fermentation residue โ˜€๏ธ Raised-bed drying โ€” Dried on raised beds to optimal moisture content

The meticulous washed processing is the defining step โ€” stripping back all fruit influence to allow the inherent grapefruit brightness, milk chocolate warmth, allspice spice, and red currant acidity of the Caturra and Bourbon to express themselves with balance, clarity, and the quiet confidence that defines this cup.

THE CUP

A balanced, beautifully drinkable, and quietly expressive washed Caturra and Bourbon from the Andean-Amazonian transition zone โ€” grapefruit brightness, milk chocolate warmth, a distinctive allspice note, and a red currant acidity in a moderate-roast cup that is honest, expressive, and deeply satisfying from first sip to last.

About this variety

Several varieties make up this lot. That can create a layered cup, but their individual flavours cannot be separated honestly after the coffee is combined.

Why this one is different
  • Peru
  • Andes-Amazon transition zone
  • 1540 masl
  • Washed

These varieties were grown or combined in Peru. The producerโ€™s lot details and tasting notes are the best guide to how they work together.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

The varieties are shown exactly as supplied for this coffee. We do not invent one combined genetic or flavour profile for the group.
