They aren't: they're the product of meticulous, deliberate processing work, and this lot is another study in restraint over spectacle.
Gesha, prized worldwide for its delicate florality and tea-like clarity, is an especially demanding canvas — it rewards precise processing but shows every flaw. Here, it's given room to express its most understated qualities rather than being pushed toward maximal fruit intensity.
THE PROCESS The Advanced Washed process at Finca El Paraiso involves:
