INTRO
Part of Terraform's Costa Rica variety series from Volcán Azul, this Anaerobic Natural Ethiopian Landrace was harvested in February 2026 at 1,700 masl. A bright fruit character with a cacao finish. In the cup: guava, pineapple, and cocoa.

THE PRODUCER
Volcán Azul is operated by the fifth generation of the Castro family, Alejo Castro Kahle, producing high-quality coffee on the slopes of the Poás Volcano. Since placing second in the Costa Rica Cup of Excellence in 2017, the estate has continued to achieve remarkable results.

Ethiopian Landrace refers to a diverse collection of coffee varieties that evolved in Ethiopia's unique environments. These varieties are typically not selectively bred through human intervention and are well adapted to their local growing conditions.

THE PROCESS
This lot is an Anaerobic Natural: cherries ferment in a sealed, oxygen-limited environment and dry whole, building the bright fruit sweetness and giving the cup its depth. The page doesn't give further steps.

THE CUP
Bright and fruit-forward: guava and pineapple lead, with a cacao finish.

About this origin Costa Rica’s volcanic highlands and meticulous milling culture produce coffees with clarity and structure. Washed, honey and natural lots commonly bring crisp citrus, ripe stone fruit and polished sweetness with a clean, lasting finish.

How it works The whole coffee cherry is dried with the fruit intact, often on raised beds or patios. The dried fruit is removed afterwards.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Costa Rica
  • Alajuela
  • 1700 masl
  • Natural

In Costa Rica, local selection, replanting and farm history can shape a mixed population over many generations.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
