THE PRODUCER
Negusse Debela established the Danche processing station in 2019 and, within a few years, moved from a computer company to a coffee business, rising to become one of Ethiopia's leading specialty exporters. The company operates three washing and processing stations in Gedeo, Kochere, and Chelelektu. Danche sits on a hillside at high altitude and sources from about 650 smallholders across Kubi, Sisota, and Sike, less than half the volume of its sister station, Chelbesa. The area's dense semi-forest vegetation gives ideal shade-grown conditions, contributing to a unique flavour. Quality is continually improved through careful washed and natural processing and special experimental batches.
Ethiopian Landrace refers to a plant population that has developed and adapted to its specific local environment over a long time, typically without human intervention, through natural selection and accumulated genetic diversity.
THE PROCESS
Hand-picked and sorted red cherries are pulped, then soaked in fermentation tanks for 72 hours. They are washed in washing tanks and soaked in soaking tanks for 4 hours, then laid out on raised beds and slowly air-dried for 10 days.
The 72-hour fermentation followed by a 4-hour clean-water soak is the defining combination. It builds the clean, floral cup with a full-bodied peach flavour.
THE CUP
Clean and floral: white floral aromas lead, with full-bodied peach flavour and bergamot notes.
