INTRO
A washed lot from the Banko Gotiti washing station in Gedeb, Gedeo, Ethiopia, grown in smallholder gardens and dried on raised beds. The roaster chose it for how clean and bright its washed lots taste. In the cup: lemon zest, raspberry, white blossom, white pomelo, and honey.
THE PRODUCER
Banko Gotiti stands on a ridge east of Gedeb town, in the hills the trade still calls Yirgacheffe, buying cherry from the smallholders farming around it. What grows there are coffee gardens rather than farms, most only a hectare or two, planted beneath false banana and shade trees and worked without chemicals because nobody there ever started using them. Everything sits at roughly 1,950–2,150 masl, so the cherry ripens slowly and comes in dense and sweet. The varieties are the local landraces growing across Gedeo, a mix nobody has ever fully catalogued.
THE PROCESS
Cherry is picked ripe, delivered the same day, pulped, and fermented in tank, then washed clean and laid on raised beds for about two weeks, turned by hand and covered through the hottest part of the afternoon.
The tank fermentation followed by slow raised-bed drying is the defining combination. It's what keeps the cup clean and bright, letting the lemon zest and white blossom show through.
THE CUP
Clean and bright: lemon zest and raspberry lead, with white blossom in the aroma and white pomelo through the middle, held together by honey sweetness.
