INTRO

From Gerson Mora at Villa Pastora in Palestina — a Red Bourbon of extraordinary precision from a four-generation family farm with roots stretching back to its founder, Madame Pastora Anacona. A technically exceptional advanced washed process — 60 hours of thermal oxidation at 50°C, followed by 92 hours of dry anaerobic fermentation — produces a cup of remarkable floralness and indulgent complexity. In the cup: violet, raspberry milkshake, and tropical fruits.

THE PRODUCER

Villa Pastora is a family legacy in the truest sense. Founded by Madame Pastora Anacona, whose name the farm proudly bears, the estate has passed its passion for coffee farming through three and four generations of the family — today represented by Gerson Mora, who has led Villa Pastora's transformation into a dedicated specialty coffee enterprise since the 2000s. Located at 1,680 MASL in Palestina, Huila, the farm's volcanic soils, stable mountain microclimate, and cool temperatures provide the ideal foundation for Red Bourbon to develop the deep sweetness and aromatic complexity that Gerson's advanced processing then elevates to an extraordinary level.

Red Bourbon, one of the oldest and most culturally significant Arabica varieties in the world, is the genetic ancestor of many modern cultivars. Prized for its natural sweetness, balanced structure, and the refined fruit character it delivers at altitude, it responds with particular brilliance to the multi-stage advanced processing Gerson applies here — where the variety's inherent richness provides the clean, expressive base for a technically masterful fermentation programme.

THE PROCESS

The Advanced Washed process at Villa Pastora involves:

🌡️ 60-hour thermal oxidation — Cherries subjected to thermal oxidation at 50°C for 60 hours, a controlled heat-based phase that initiates and directs the development of complex aromatic compounds before fermentation begins 🔧 Depulping — Outer skin removed after the thermal oxidation phase 🔒 92-hour dry anaerobic fermentation — Depulped beans fermented dry in sealed, oxygen-free conditions for 92 hours — a long and precisely controlled phase that builds the violet florality and tropical fruit depth that define this lot 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️/🌬️ Solar or mechanical drying — Dried using solar or mechanical methods depending on climatic conditions, to optimal moisture content

The combination of thermal oxidation and extended dry anaerobic fermentation is the defining approach — by first applying a sustained heat phase to direct aromatic development before a long sealed fermentation, Gerson builds the extraordinary floral and indulgent fruit complexity that makes this Red Bourbon so distinctive, while the clean washed finish preserves the precision and definition that allow every note to emerge with clarity.

THE CUP

A richly aromatic and technically extraordinary advanced washed Red Bourbon from one of Palestina's most dedicated and generationally rooted family farms — violet florality, raspberry milkshake indulgence, and tropical fruit vibrancy in a complex, perfectly balanced cup. A family legacy expressed through a masterclass in fermentation precision.

About this variety

Pink Bourbon, also sold as Rosado, is often chosen for a bright, floral and fruit-forward cup. Tropical fruit, citrus and stone fruit are useful reference points, but the lot’s own notes should lead.

Why this one is different

  • Adv. Washed

Colombian Pink Bourbon often feels perfumed and lifted, with orange blossom, rose, bright citrus, peach or tropical fruit and a silky, tea-like finish. The reviewed coffees range from clean washed lots to naturals and co-ferments, where processing can push the cup towards candy, spice or deeper fruit. The producer's tasting notes are the best guide to this particular bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Pink Bourbon, also called Rosado, became prominent through Colombian specialty producers and is now grown across several regions. The reviewed selection shows why it is sought after: even with very different processes, floral aromatics, lively fruit and a refined texture appear repeatedly.

Identification note Pink Bourbon or Rosado is a widely used Colombian name, but genetic testing shows it is not Bourbon. Some tested lots also contained mixed plant material, so the producer's identification remains important for each coffee.

Classification Reported cultivar

Technical lineage Recent genetic testing places tested Pink Bourbon material with Ethiopian landrace coffee rather than the Bourbon family. The familiar name is retained because it is the name used by producers and roasters.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
