THE PRODUCER
Finca El Injerto is one of Guatemala's most storied and internationally recognised specialty farms. Located in the Aguacatán municipality of Huehuetenango — one of Central America's finest growing regions — the farm sits between 1,500 and 1,920 MASL on mineral-rich volcanic soils, where a cool, stable microclimate and slow, homogeneous cherry maturation create the conditions for exceptional aromatic complexity. Under the stewardship of the Aguirre family, El Injerto has won the Cup of Excellence multiple times and built a global reputation for purity, consistency, and the meticulous cultivation of rare and prestigious varieties.
SL-28, originally developed by Scott Agricultural Laboratories in Kenya in the 1930s for drought resistance and cup quality, has found a compelling home in Huehuetenango — where its characteristic blackcurrant acidity, full body, and exceptional complexity express themselves with particular brilliance in El Injerto's cool highland terroir.
THE PROCESS
The Washed process at Finca El Injerto involves:
🍒 Hand-picking — Cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried slowly to optimal moisture content
