INTRO
A washed microlot from La Inmaculada's Fellow Farms project — floral notes in the fragrance meet tropical character in the cup. Physalis and elderflower carry the florality, while loquat and pineapple bring the fruitier, tropical side. Smooth body, honeyed acidity, and a long, sweet aftertaste. In the cup: physalis, elderflower, and loquat.

THE PRODUCER
Since 2022, Finca La Inmaculada has run the Fellow Farms project, an initiative collaborating with neighbouring associated farms across Huila and Cauca. They purchase cherry from these small producers at a premium price, alongside educational support in good agronomic and harvest practices. The project also works with AMCAPEC, an association of women coffee growers from the municipalities of Tambo, Piendamó, and Caldono in Cauca — a genuinely lovely initiative helping small producers sell their coffee transparently and with greater benefit.

All coffee from this project is processed at Finca La Inmaculada, ensuring consistency and full traceability for every lot.

THE PROCESS
Cherries from the various neighbouring farms are received at La Inmaculada, where they undergo flotation selection to remove leaves, stones, and low-density cherries. They then pass through electronic sorting to select optimally ripe cherries, followed by manual selection. Finally, the best-quality cherries are depulped, washed, and taken through a controlled drying process.

The layered sorting process — flotation, electronic, and manual — is the defining step here. It's what ensures only the highest-quality cherries reach drying, building the delicate physalis and elderflower florality alongside the loquat and pineapple sweetness that define this cup.

THE CUP
Floral in fragrance, tropical in the cup — physalis and elderflower notes lead, with loquat and pineapple bringing fruitier depth. Smooth body, honeyed acidity, and a long, sweet aftertaste.
