HACHI – Banira (バニラ) is a washed Gesha coffee produced by HACHI Panama, offering a delicate cup that highlights the expressive character of the Gesha variety.

THE PRODUCER

The Hachi Project is farmed by Bermudez, Hartmann and Antonaci in Santa Clara, within the Volcán region of Chiriquí, Panama, at 1400–1600 metres above sea level—prime terroir for cultivating expressive Geisha.

This lot is roasted by Native, a Dallas-based roaster that exists to challenge the ordinary in the specialty coffee industry. Whilst Native maintains one tasting room in Dallas, they roast at origin in Medellín, Colombia and Chiriquí, Panama, allowing close collaboration with producers. Their intentional approach showcases sweetness and clarity in the cup whilst preserving the producer's vision, origin terroir, and unique varietals.

THE PROCESS

The Washed process at Hachi Project involves:

  • 🔧 De-Pulping — Mechanical removal of skin and mucilage

  • 🚿 Washing — Thorough washing in clean water
