INTRO
Santa Elena is run by Cafelino on the heights of Boquete, with an emphasis on sustainability, biodiversity, and exclusively hand-picked cherries. In the cup: caramel, Brazil nut, and dried fig.
THE PRODUCER
Cafelino cultivates several Arabica varieties at Santa Elena, high above Boquete in Chiriquí, with a focus on sustainability, preserving biodiversity, and harvesting cherries exclusively by hand.
Obatã is still relatively discreet in specialty coffee. It comes from a breeding programme crossing Timor Hybrid and Villa Sarchi, developed for excellent disease resistance while keeping remarkable aromatic potential. Grown at altitude, as at Santa Elena, it gives a soft, structured, expressive cup.
THE PROCESS
After harvest, the pulp is removed from the cherries before a controlled fermentation phase designed to eliminate the mucilage. The beans are then washed and slowly dried on African beds.
The controlled fermentation followed by slow African-bed drying is the defining combination. It brings out Obatã's finesse, with a sweet, structured cup.
THE CUP
Gourmand and rounded: Brazil nut brings sweetness, then caramel comes through with a rich, creamy smoothness. Dried fig notes wrap around all the aromas for a fascinating balance.
