INTRO

From Edgar Motta via the Rosa Del Mar project in Acevedo — a vibrant, approachable, and beautifully fruit-forward semi-washed Pink Bourbon that immediately stood out on Moonwake's cupping table. Expressive and tropical without being dominated by process, with a smoothie-like sweetness, creamy body, and a candy-like guava finish that lingers long after the cup cools. In the cup: strawberry, yellow peach, hibiscus, and guava.

THE PRODUCER

Rosa Del Mar is a project within the Acevedo Crop Management group — a collaboration-led initiative designed to help smallholder farmers achieve high quality coffees through shared infrastructure, processing standardisation, and the kind of support that individual small-scale producers often can't access on their own. Edgar Motta is a second-generation coffee farmer who has been steadily transitioning his farm away from Caturra and Castillo toward more distinctive varietals — this Pink Bourbon lot representing the direction he has chosen and the quality it can deliver.

Pink Bourbon is a variety grown primarily in Huila, genetically identified as Ethiopian Landrace and belonging to the Core Ethiopia group alongside Gesha, Chiroso, Sidra, and Aji. At 1,740 MASL in Acevedo's cool mountain microclimate, its characteristic tropical fruit sweetness and hibiscus florality find ideal conditions — and the Rosa Del Mar semi-washed process is deliberately calibrated to let those qualities speak clearly without being overwhelmed by processing character.

THE PROCESS

The Semi-Washed process at Rosa Del Mar involves:

🍒 Hand-picking — Pink Bourbon cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed while a portion of the mucilage is retained on the bean 🧪 Fermentation — Beans fermented with mucilage intact for a controlled period 💧 Light washing — Lightly washed after fermentation — less thorough than a full wash, preserving some fruit sweetness while removing fermentation residue ☀️ Drying — Dried to optimal moisture content

The semi-washed approach — a deliberate middle path between fully washed and honey — is the defining step. By optimising water usage while retaining just enough mucilage to build sweetness and tropical depth without fermentation funk, Rosa Del Mar produce a cup that balances variety, terroir, and processing with remarkable clarity and precision.

A vibrant, creamy, and beautifully balanced semi-washed Pink Bourbon from one of Acevedo's most thoughtfully managed smallholder projects — strawberry and yellow peach sweetness with a smoothie-like creaminess up front, hibiscus florality lifting through the mid-palate, and a candy-like guava finish that lingers long and clean.
