THE PRODUCER
Chevas Coffee Estate was founded in 2016 by José Luis Chevas in Boquete — a small town in the highlands of Panama that has become synonymous with the world's finest Geisha coffee since the Peterson family's landmark Best of Panama victory in 2004. While the estate is young, it carries generations of history behind it, and José Luis's vision is clear: to craft complex, flavour-forward coffees for the high-end specialty coffee market. The results have been swift and significant — in 2024, Chevas Coffee Estate placed 9th in the Natural Geisha category at the Best of Panama competition, an outstanding achievement for a farm barely eight years old.
Geisha, first collected from the forests of Ethiopia in the 1930s and distributed through research stations in Tanzania and Central America before arriving in Panama in the 1960s, has become the benchmark variety for competition baristas and specialty enthusiasts worldwide. In Boquete's cool highland climate, where volcanic soils, persistent cloud cover, and slow cherry development create ideal conditions for the variety's hallmark florality and delicate complexity, Chevas Coffee Estate is rapidly establishing itself as a name to follow closely.
THE PROCESS
The Washed process at Chevas Coffee Estate involves:
🍒 Hand-picking — Geisha cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed to remove all fermentation residue ☀️ Drying — Dried to optimal moisture content
The meticulous washed processing is the defining step — stripping back all fruit influence to allow the intrinsic citrus brightness and jasmine florality of the Geisha variety and Boquete's extraordinary volcanic terroir to express themselves with full transparency and elegance.
