INTRO
A light roast from a true family endeavour in Cerrado Mineiro, Brazil's first Denomination of Origin for coffee. In the cup: mango, apple cider, and chocolate. Great on espresso.
THE PRODUCER
Imaculada and her husband Danilo have spent the last 50 years growing coffee and refining their craft in Cerrado Mineiro. Despite the scale of their enterprise, they preserve almost a third of their land for conservation, balancing production with sustainability so wildlife can thrive and the region's biodiversity is protected.
Cerrado Mineiro sits in the northwest of Minas Gerais at roughly 800–1,300 masl and was Brazil's first coffee region to receive a Denomination of Origin. Two distinct seasons, a hot, wet summer for flowering and fruit development and a long dry winter for harvest, let cherries dry evenly on the farm, which is why the region is known for natural-process coffees.
THE PROCESS
This lot is an Advanced Natural: cherries dry whole, letting the fruit's sugars pass into the bean. The region's long dry harvest season supports even drying, which builds the ripe fruit sweetness. The page doesn't give further processing detail.
THE CUP
Sweet and rounded: mango and apple cider fruit over a chocolate base.
