INTRO
Los Brujos sits above Potrerillos on the southern flank of the Barú Volcano, a sheltered pocket of forest that, by the estate's own account, makes it taste unlike anything else they farm. In the cup: licorice, tropical fruit, and dried apricot.
THE PRODUCER
Hacienda Bárbara is the Panamanian side of the Rogers family, named for Barbara Rogers. The farming is run by Hunter Tedman, twice president of the Specialty Coffee Association of Panama, who also farms his own Black Moon nearby. They hold three properties in Chiriquí and process everything at their own mill, Beneficio El Bajareque in Boquete. The land went organic more than a decade ago and is moving toward regenerative practice, with roughly half left standing as forest for shade and for the bajareque mist to settle into. Los Brujos is the newest of the three; its shelter from the wind gives the coffee a heavier, more distinctive shape than the rest of the district. The first coffee entered from this farm placed fifth in the Varietals category at Best of Panama in 2022.
Pacamara is the large-leafed cross of Pacas and Maragogype, with distinctive high-quality potential, showing fruit, floral, herbal, and complex notes in elite lots.
THE PROCESS
This lot is a Natural: the whole cherry is dried intact, with the skin, pulp, and mucilage left on, so the fruit's sugars and aromas pass into the seed as it slowly dries. Natural processing gives heavy body, deep fruit, and wine-like sweetness.
THE CUP
Heavier and more distinctive in shape: licorice leads, with tropical fruit and dried apricot sweetness.
