THE PROCESS This lot is a Natural with a controlled 48-hour fermentation — cherries are dried whole while fermentation is carefully managed over two days, deepening complexity before drying. This precise control is what builds the vibrant lemon brightness, rose florality, and strawberry sweetness that define this cup, with green tea delicacy layered on top.

About this variety

This variety is recorded for the coffee, but we do not yet have a reviewed typical cup profile for it. The tasting notes for this specific lot are the best guide.

Why this one is different
  • Panama
  • Chiriquí
  • 1700+ masl
  • Natural

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

Growing conditions in Chiriquí at 1700+ masl also shape ripening, sweetness, acidity and aroma.

A little background

This is the variety name supplied by the producer or roaster. We preserve that identification without inventing a genetic history.
