INTRO Sitting at 1,700 meters in the mountainous Tarrazú region of Costa Rica, Agro-Hellena is run by Hellen Mora, third generation of a family of passionate producers. This anaerobic natural Caturra showcases all the boldness and mastery of the Mora family — intensely fruited and fermented, carried by the brightness of black cherry and the depth of an elegant cacao. THE PRODUCER Founded in 2015 by Don William Mora Moreno, Agro-Hellena spans 45 hectares, half of which is left in its natural state to preserve the local ecological balance and microclimate. Guided by deep respect for nature, the Mora family favours natural and anaerobic processes that minimise water discharge and repurpose coffee byproducts, composting them and returning them to the soil.
THE PROCESS This Caturra undergoes Anaerobic Natural fermentation — cherries ferment in an oxygen-limited environment before drying whole, allowing the fruit to impart deep character directly into the bean.
The anaerobic fermentation is the defining step — it's what builds the intensely fruited, fermented profile behind the black cherry brightness and elegant cacao depth, all wrapped in a creamy texture with panela accents that bring structure and balance.
