INTRO
A perfectly balanced Colombian coffee, where indulgence meets a delicately sweet freshness. In the cup: apricot candy, candied ginger, and red oolong tea.

THE PRODUCER
Wilton Benitez produces this Yellow Typica at Granja Paraíso 92 in Cauca, an estate known for its experimental processing. Typica is one of the oldest Arabica varieties, known for clarity and sweetness and a delicate, refined structure in the cup; Yellow Typica is the yellow-cherried form.

THE PROCESS
This lot goes through a double anaerobic fermentation and a thermal shock, then is washed. Layering two anaerobic fermentations with a thermal shock builds the sweet, candy-like fruit and the spiced, tea-like character while keeping the cup clean. Tanat lists it among its "innovative process" coffees.

THE CUP
Balanced and sweet, with a medium acidity and a juicy body: an apricot candy note opens with warm, autumnal tones, candied ginger adds a bright, slightly tangy touch that livens the profile without overpowering its sweetness, and red oolong tea emerges in the finish with a comforting, herbaceous roundness that lingers on the palate.

How it works The coffee ferments in a closed, oxygen-limited vessel, either as a whole cherry or after pulping. Anaerobic describes the atmosphere, not one fixed recipe.

Typical influence These coffees are often described as rich and aromatic, with fruit, spice, layered sweetness or a fuller texture. Results can range from clean to distinctly funky.

About this variety

Yellow Typica is best treated as a traceable producer selection rather than a promise of one universal flavour. The reviewed high-grown Costa Rican lot is floral and juicy, with pineapple, lavender and peach. Yellow honey processing adds sweetness and texture while the altitude helps retain a lively, clear finish.

Why this one is different
  • Colombia
  • Cauca
  • Anaerobic

Anaerobic describes an oxygen-limited environment, not one fixed recipe or flavour. This coffee’s own tasting notes are more useful than a general variety stereotype.

Growing conditions in Cauca are another reason this coffee may differ from the same variety grown elsewhere.

A little background

The Yellow Typica name is used for a small planting cultivated by Oscar and Luis Monge and processed at La Lia Micro-Mill in Costa Rica. The lot has been produced over several harvests, but the public evidence supports the farm identity more strongly than a broad genetic history. The profile therefore stays specific and qualified.

Identification note Yellow Typica is the producer-supplied name for this planting. Reliable public genetic evidence for a distinct universal Yellow Typica cultivar is limited, so the profile does not automatically merge it with Typica or claim a proven mutation.

Classification Producer-identified yellow-fruited Typica selection

Technical lineage Producer-identified Typica-related selection; distinct genetic status has not been independently established.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
