INTRO
A Colombian coffee produced through prolonged yeast fermentation, then washed to ensure a clear, balanced cup. The cup opens with a creamy, acidic apricot yogurt sensation before evolving into ripe, syrupy peach, with almond adding roundness and length. In the cup: apricot yogurt, peach syrup, and almonds.

THE PRODUCER
This lot comes from Finca El Paraíso in Colombia, growing Castillo.

THE PROCESS
This lot undergoes an extended fermentation with added yeast before a washed finish. The process emphasises aromatic development while keeping the flavour truly clean.

The extended yeast fermentation is the defining step. It gives the fruit a creamy, lactic dimension and a silky texture, building the apricot yogurt and peach syrup character without sacrificing clarity.

THE CUP
Creamy, sweet, and very silky: apricot yogurt opens the cup, creamy and acidic, before evolving into ripe, syrupy peach, with almond notes providing roundness and length. The fermentation gives the fruit a milky dimension without sacrificing clarity.

About this variety

Castillo is designed to produce reliable quality across Colombian growing regions. It can be clean, sweet and balanced, but the farm and processing usually tell you more about the exact flavour.

Why this one is different
  • Colombia
  • Valle del Cauca
  • Washed

In Colombia, Castillo includes regional selections intended for different coffee-growing areas. Two Castillo lots can therefore taste quite different.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Castillo refers to a group of Colombian cultivars developed for resistance to coffee leaf rust while maintaining useful quality and agronomic performance across different growing regions.

Classification Colombian cultivar group

Technical lineage Caturra crossed with Timor Hybrid-derived material, followed by regional selection.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
