The Producer:
This coffee is grown by Danilo Sanchez, a third‑generation coffee producer working the Los Cedros farm in the El Paraíso region. Danilo began cultivating coffee under the guidance of his father and has steadily expanded his plots and practices over more than a decade, balancing family tradition with dedication to quality. Despite challenges like labour shortages and climate variability, Danilo’s continued commitment to excellence shows in every harvest.
The Process:
Danilo Sanchez (Honduras) is crafted using an anaerobic washed method designed to amplify sweetness and clarity. Fully ripe cherries are harvested at peak ripeness and sealed in low‑oxygen conditions for about 50 hours, encouraging complex ferment development. After this phase, cherries are depulped and undergo further dry fermentation (~38 hrs) before being dried under sunlight (typically 20–25 days) with temperature‑regulating covers. This careful sequence enhances both fruit intensity and structural nuance in the cup.
The Cup:
In the cup, this coffee is bright, sweet, and layered.
