INTRO
Coffee flower aromatics, delicate tropical fruit, and a long, layered finish. Iridescence brings together the floral character of Panamanian Gesha with Jamison Savage's precise approach to processing, selected for its expressive aromatics, refined acidity, and sugarcane sweetness. In the cup: coffee flower, lychee, tangerine, apricot, chamomile, and sugarcane.
THE PRODUCER
Jamison Savage's dedication to varietal-driven coffees is central to why this lot was chosen. His approach offers a way to experience Green Tip Gesha through both its distinctive character and the processing decisions that shape its expression, grown at 1,800 masl in Volcán, Chiriquí.
THE PROCESS
Cherries are harvested at peak ripeness, then de-pulped and placed in sealed tanks with circulating carbon dioxide, with temperature and pH carefully monitored throughout fermentation. After fermentation, the coffee dries on shaded raised beds, then rests in hermetically sealed bags for 60–90 days before final hulling and sorting.
The carbonic maceration step is the defining difference. It adds another dimension to the washed process, developing aromatic complexity while preserving clarity, so florals and fruit stay distinct.
THE CUP
Coffee flower leads the aroma, followed by lychee, tangerine, and apricot, with chamomile bringing a gentle floral softness and sugarcane sweetness carrying through. The acidity is refined and lively, with a long, complex finish that evolves as the cup cools.
