INTRO
Jairo Arcila is one of Colombia's most celebrated producers, and his experimental lots are why we keep going back. For Ultra Violet, ripe Castillo cherries are selectively hand-harvested, floated and sorted, then co-fermented with fresh blackberries before a careful wash and slow drying with close moisture control.
THE PRODUCER
Jairo Arcila farms in Quindío, Colombia, and has built a reputation as one of the country's most innovative producers—his name recognisable from other standout experimental lots including Starburst Soda, Gummy Bear and Velvet Berry.
Cofinet, the import partner working directly with Jairo and his family, keeps every lot traceable and the quality exactly where it should be, allowing his experimental co-ferments to reach roasters with full transparency and consistency.
THE PROCESS
The Blackberries Washed Co-Ferment process at Jairo Arcila's farm involves:
🍒 Selective Hand Harvest — Ripe Castillo cherries hand-picked
👁️ Floating and Sorting — Cherries floated and sorted for quality
🫐 Co-Fermentation with Blackberries — Cherries fermented alongside fresh blackberries
🚿 Washing — Careful wash following co-fermentation
☀️ Slow Drying — Slow dried with close moisture control
This blackberry co-fermentation, followed by a careful wash and controlled slow drying, creates the deep, saturated berry character that defines Ultra Violet.
THE CUP
Expect blackberry and blueberry straight away, deep and saturated. A creamy, boysenberry-ice-cream sweetness carries the middle, and a soft botanical note keeps the finish composed and long. Rich, purple and quietly wild.
