INTRO
A very special single-producer lot from Boneya Robe, grown in a small garden at extreme altitude in Gedeb. Only the ripest cherries were selected, with meticulous processing throughout. In the cup: ripe peach, watermelon, and sweet tea.
THE PRODUCER
Boneya Robe tends a small 2-hectare garden at extreme altitude in Gedeb, Gedeo — this marks the first year his coffee has been fully separated as a single-producer lot, made possible through the work of SNAP and the Chorso Bule site. Cherries were hand-picked above 20 Brix and 2,450 MASL, a level of selectivity that speaks to the precision behind this lot.
Ethiopia's coffee biodiversity is unmatched, with over 60 distinct varieties identified through DNA testing — yet single-variety lots remain rare given the structure of the country's coffee trade. Most Ethiopian coffees are blends referred to simply as Ethiopian Landrace, which makes a lot this traceable genuinely special.
THE PROCESS
Cherries were hand-picked above 20 Brix and floated for selection, then held in-cherry for 12 hours in shade. After de-pulping and cleaning, the coffee underwent a 12-hour dry fermentation in plastic barrels, followed by a further 12 hours of wet fermentation. It was then meticulously hand-washed to remove only the mucilage, before drying in shade until moisture content reached approximately 11%.
