INTRO Violet Nectar is a silky, jammy coffee with a profile of jammy stone fruits — plums, jammy figs, and sprite soda. Profiled specifically for espresso, where it best excels. A first year working with the Buncho washing station, and an exciting one to feature this honey 74158. In the cup: plums, figs, and sprite soda.

THE PRODUCER The Buncho Washing Station is located in the Shantawene kebele, part of the Bensa area in Sidama, Ethiopia. Managed by Asefa Dukamo Korma, the site sits at 1,920–2,020 masl, high in the mountains of Sidama, and is dedicated to producing Washed, Honey, Natural, and Anaerobic processes. More than 800 farmers from the region contribute cherry to this site, mostly of the 74158 variety.

THE PROCESS Once cherries arrive at Buncho, they're placed in water for sorting and removal of floaters, then de-pulped and laid to dry with mucilage intact on raised African beds. The parchment is constantly moved each day to ensure even drying, taking 12–15 days depending on weather, until reaching the desired humidity.

The mucilage-intact honey drying is the defining step — it's what builds the silky, jammy sweetness behind the plum and fig character that define this cup.

THE CUP Sweet and jammy — plums, figs, and dark berries throughout, with a balanced acidity reminiscent of lemon lime soda and a sweetness similar to chocolate. Profiled specifically for espresso.
