UME — named after the Japanese plum blossom — is a meticulously processed Caturra from Hachi's Rocky Mountain Farm in Renacimiento, Chiriquí. Washed with precision and care, it delivers a cup of striking clarity: rich chocolate sweetness, radiant citrus, and the gentle stone-fruit softness that gives this lot its name.

THE PRODUCER
The Hachi Coffee Project is a visionary collaboration between two of specialty coffee's most forward-thinking minds: Diego Samuel Bermúdez Tapia — the Colombian processing pioneer behind Finca El Paraíso — and Allan Hartmann of the esteemed Panamanian Hartmann family, long-time stewards of Rocky Mountain Farm in Renacimiento, Chiriquí.
Hachi — the Japanese word for "eight," symbolising infinity — was founded with a singular ambition: to push beyond conventional expectations of what coffee can express, combining biotechnology, controlled fermentation, and rigorous agricultural science. The Hartmann family's Rocky Mountain Farm has distinguished itself at the Best of Panama, placing in both the Washed and Natural Geisha categories in 2022. Under the Hachi project, this world-class terroir is now the canvas for some of the most technically precise processing in the specialty world.
Their focus on non-Gesha varieties such as Caturra represents a deliberate challenge: can scientific intention and terroir together elevate a common variety to extraordinary heights? With UME, the answer is a resounding yes.
THE PROCESS
The Washed process for UME at Rocky Mountain Farm involves:
🍒 Selective Harvest — Ripe cherries hand-picked at peak sugar development
🔧 Depulping — Cherries mechanically depulped to remove fruit skin
💧 Submerged Fermentation — Seeds fermented submerged in water, allowing precise control of microbial activity and aromatic development
✅ Washing — Thoroughly washed to remove remaining mucilage and lock in clean, defined flavours
☀️ Raised Bed Drying — Dried on raised beds with controlled airflow for even moisture reduction
📅 Rest & Quality Control — Rested and assessed before release to ensure consistency
The result is a coffee of exceptional clarity — structured acidity, clean sweetness, and a defined flavour profile that lets Caturra's intrinsic character shine without interference.
THE CUP
UME opens with the comforting warmth of milk chocolate before revealing a bright, uplifting citrus note — vivid orange peel and zest. As the cup cools, a soft plum sweetness emerges, lending depth and a long, silky finish that lingers gently.
