INTRO
Sakaeru (栄える) — Japanese for "to flourish" — is the third and most technically distinctive expression in Native Coffee's Hachi Panama series. A sous vide processed Gesha of extraordinary aromatic precision, built on a technique borrowed from the culinary world and applied to coffee with remarkable results. In the cup: lychee sweetness, chamomile delicacy, mixed berries, and a bright orange finish — a profile of exceptional complexity and clarity.
THE PRODUCER
Hachi Coffee is a Panamanian specialty producer cultivating Gesha in the country's celebrated highland growing regions, where volcanic soils, cool temperatures, and cloud-laden microclimates create the conditions for exceptional cup quality. The Sakaeru lot represents Hachi's most experimental expression — a sous vide process that places the farm at the forefront of post-harvest innovation, combining Panama's extraordinary Gesha terroir with a processing technique that prioritises precision, control, and aromatic preservation above all else.
Gesha, first collected from the forests of Ethiopia in the 1930s and arriving in Panama via research stations in Tanzania and Central America in the 1960s, became the benchmark variety for competition baristas and specialty enthusiasts worldwide following its landmark 2004 Best of Panama debut. The sous vide process here allows every aromatic dimension of this celebrated variety to be captured and preserved with a level of precision that conventional processing methods cannot match.
THE PROCESS
The Sous Vide process involves:
