DETAILS

  • Producer: Hachi Panama
  • Region: Panama
  • Varietal: Caturra

INTRO
"Kohaku" (琥珀, amber) from Hachi Panama — a washed Caturra with dark berry depth and a cacao richness, balanced by a honeydew freshness. In the cup: dark berries, cacao, and honeydew.

THE PRODUCER
Hachi Panama has built a reputation as one of the country's most sought-after Gesha producers, known for meticulous, small-batch processing that consistently draws attention from top roasters and collectors worldwide. This washed Caturra, alongside sibling releases Kabuki and Yoru, shows that same exacting standard applied to more classic, everyday varieties.

THE PROCESS
This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Caturra's naturally rich, structured character to come through, building the dark berry and cacao depth that define this cup.

THE CUP
Rich and balanced — dark berries and cacao depth up front, with a honeydew freshness on the finish.

Coffee Variety

  • Honeydew
  • Cacao
  • Dark Berries

About this variety

Caturra often gives a clean, sweet and lively cup. Depending on origin and process, it can lean towards crisp citrus and red fruit or a softer caramel-like balance.

Why this one is different
  • Panama
  • Washed

Caturra has a long history across Latin America. In Panama, the farm, altitude and processing are more useful for predicting the cup than the variety name alone.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Caturra is a naturally occurring compact mutation of Bourbon first identified in Brazil. Its smaller growth habit made it influential across Latin American coffee production.

Classification Bourbon mutation

Technical lineage Natural mutation of Bourbon.
