DETAILS

  • Producer: Hachi Panama
  • Region: Panama
  • Varietal: Caturra
  • Process: Washed

INTRO "Kabuki" (歌舞伎) from Hachi Panama — a clean, classic Caturra proving the same precision behind their acclaimed Gesha work extends to more traditional varieties. Crisp Honeycrisp apple leads, with orange brightness and a yellow plum sweetness underneath. In the cup: Honeycrisp apple, orange, and yellow plum.

THE PRODUCER Hachi Panama has built a reputation as one of the country's most sought-after Gesha producers, known for meticulous, small-batch processing that consistently draws attention from top roasters and collectors worldwide. This washed Caturra shows that same exacting standard applied to a more classic, everyday varietal.

THE PROCESS This lot is Washed, a method that removes the fruit before fermentation and drying — allowing Caturra's naturally clean, crisp character to come through, building the Honeycrisp apple and orange brightness that define this cup.

THE CUP Crisp and clean — Honeycrisp apple up front, orange brightness through the middle, and a yellow plum sweetness on the finish. A precise, classic expression of Hachi's washed processing work.

Coffee Variety

In this coffee

Crisp, clean sweetness. Hachi Project through and through.

  • Yellow Plum
  • Orange
  • Honeycrisp Apple

About this variety

Caturra often gives a clean, sweet and lively cup. Depending on origin and process, it can lean towards crisp citrus and red fruit or a softer caramel-like balance.

Why this one is different
  • Panama
  • Washed

Caturra has a long history across Latin America. In Panama, the farm, altitude and processing are more useful for predicting the cup than the variety name alone.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Caturra is a naturally occurring compact mutation of Bourbon first identified in Brazil. Its smaller growth habit made it influential across Latin American coffee production.

Classification Bourbon mutation

Technical lineage Natural mutation of Bourbon.
