INTRO
It's been a particularly strong harvest in Peru, and that quality extends even into darker roast profiles. This field blend brings together varieties known for their cocoa-forward qualities with a carefully controlled natural fermentation, giving a deeply rich cup that works especially well as a dark roast, with plenty of character left beneath the roast development. In the cup: pistachio, chocolate truffle, and black cherry jam.

THE PRODUCER
El Paraíso ("paradise") is a village in the Huabal district, with the village centre atop a small mountain with beautiful vistas in every direction, at 2,000 masl. Producers here mostly grow Caturra, Bourbon, and Catimor mixed together, on farms around the village centre at 1,800 to 2,050 meters above sea level.

THE PROCESS
This lot is a Natural, with a carefully controlled natural fermentation: cherries are dried whole, letting the fruit's sugars pass into the bean, which pairs with the cocoa-forward varieties to build the deep, rich profile.

The controlled natural fermentation is the defining step. It's what keeps distinct fruit and processing character beneath the dark roast, giving the black cherry jam finish.

THE CUP
Deep and rich: dark chocolate truffle dominates, with a dense sweetness and rich texture, alongside a soft pistachio creaminess. The finish adds a concentrated black cherry jam that lingers well after the sip.

About this variety

Several varieties make up this lot. That can create a layered cup, but their individual flavours cannot be separated honestly after the coffee is combined.

Why this one is different
  • Peru
  • Cajamarca
  • 1800-2050 masl
  • Natural

These varieties were grown or combined in Peru. The producer’s lot details and tasting notes are the best guide to how they work together.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.
