INTRO

Orange County is one of those coffees that DAK fell in love with at first sip. An exceptional natural Red Catuai from Finca Voo in Costa Rica's legendary Tarrazú region, it offers a remarkably clean natural profile — vibrant with blood orange brightness, earthy rhubarb complexity, and a long white honey finish. For a natural, the clarity here is extraordinary.

THE PRODUCER

Ivan Solis farms Finca Voo at between 1,960 and 2,000 MASL in Tarrazú — one of the highest and most prestigious growing regions in Costa Rica. The extreme altitude slows cherry development, concentrating sugars and building the structural complexity that makes Tarrazú coffees so sought after internationally.

Costa Rica has long been known for its meticulous post-harvest processing, and Finca Voo exemplifies this tradition. Ivan's decision to process the Red Catuai as a natural — unusual for the region, where washed coffees have historically dominated — reflects both confidence in the raw material and careful control of the drying environment at altitude.

THE PROCESS

The Natural process at Finca Voo involves:

  • 🍒 Selective Harvest — Ripe Red Catuai cherries hand-picked at full maturity
  • ✅ Sorting — Cherries floated and sorted to remove defects before drying
  • ☀️ Raised Bed Drying — Whole cherries dried slowly on raised beds at high altitude, allowing fruit sugars to concentrate and infuse the bean
  • 📅 Extended Resting — Careful monitoring of moisture content throughout the drying period to achieve consistency

The high altitude and careful drying regime produce a natural with exceptional clarity — fruit-forward and sweet, yet without the fermented heaviness that lesser naturals can carry.

THE CUP

Orange County is a vivid, sunlit cup. Blood orange brightness opens the palate, followed by the tart earthiness of rhubarb and settling into a long, clean white honey sweetness. For a natural processed coffee, the clarity and cleanliness here are remarkable — this is a filter coffee that converts sceptics of the natural style.

About this origin Costa Rica’s volcanic highlands and meticulous milling culture produce coffees with clarity and structure. Washed, honey and natural lots commonly bring crisp citrus, ripe stone fruit and polished sweetness with a clean, lasting finish.

About this variety

Usually approachable and sweet, but not locked to one flavour style. Roaster descriptions range from cocoa, milk chocolate, nougat and apple to red fruit, berries and jam, showing how strongly process and roast influence the result.

Why this one is different
  • Costa Rica
  • Tarrazú
  • Natural

This Costa Rican Red Catuaí is floral, clean and gently rich, with dried fruit and berry sweetness. Yellow Honey processing adds roundness while keeping the cup elegant and clearly defined. Here, Yellow Honey is the processing style; the coffee itself is the red-fruited Catuaí variety.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

The Navarro family grows this lot at El Alto, Monte Copey, between roughly 1,900 and 2,000 metres in the Dota Valley of Tarrazú. The high elevation and careful honey process are important context for its refined sweetness.

Identification note This context follows the producer's Red Catuaí identification and one high-grown lot. Yellow Honey describes the processing method, not the cherry colour or a Yellow Catuaí variety.

Classification Red-fruited Catuaí selection

Technical lineage Catuaí was developed in Brazil from Mundo Novo and Caturra. Red Catuaí refers to red-fruited selections within that family, distinct from the processing name used on this lot.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
