Roaster notes

THE CUP

Playful and indulgent. Think chocolate milk (Nesquik), cherry-filled doughnut, and a soft lift of vanilla. Sweet, creamy, and layered.

THE ORIGIN

  • Farm: El Encanto, Colombia

  • Producer: In collaboration with Cata Export

  • Varieties: Caturra & Chiroso

  • Altitude: 1,800 masl

  • Process: Yeast-inoculated natural

THE PROCESS

Advanced fermentation with a precision yeast culture. Inoculation drives consistency and enhances fruit development, giving this lot its rich, confectionary character and clean finish.

Flavour Notes: Chocolate Milk, Cherry Liquor, Vanilla

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

How it works The whole coffee cherry is dried with the fruit intact, often on raised beds or patios. The dried fruit is removed afterwards.

Typical influence Natural coffees are often described as sweet and full-bodied, with ripe berry or tropical-fruit flavours and sometimes a gentle wine-like note.

About this variety

Several varieties make up this lot. That can create a layered cup, but their individual flavours cannot be separated honestly after the coffee is combined.

Why this one is different
  • Colombia
  • Pitalito
  • Natural

These varieties were grown or combined in Colombia. The producer’s lot details and tasting notes are the best guide to how they work together.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

The varieties are shown exactly as supplied for this coffee. We do not invent one combined genetic or flavour profile for the group.
