INTRO
Strawberry Land is back, with the same varietal and same process as last year. For this lot, fermentation is skipped entirely: cherries are selected at full ripeness, then dried whole in a container dryer under constant airflow, working the way dehydrating fruit works, so moisture leaves whilst sugar stays to build sweetness.
THE PRODUCER
This 100% Ethiosar lot is made up of single-day lots from eight farms in Caranavi that are part of Fincas Los Rodríguez, found at elevations between 1400–1800 metres above sea level. The farms are owned by Pedro Rodríguez and his family. Over the last decade, Rodríguez has worked tirelessly to build production and expand the market for Bolivian specialty coffee, helping hundreds of local farmers recognise and realise the potential of their land and crops.
Roasted by Dak Coffee Roasters, founded in Amsterdam in 2019 by Louis-Philippe Boucher and Veronique Lagarde. The pair select coffees based on unique tasting profiles and full traceability, partnering with importers who share their values.
THE PRODUCER (Varietal Note)
Ethiosar is a hybrid variety created from a complex triple crossing: the flavourful Ethiopian variety Sudan Rume was crossed with the highly resistant Sarchimor variety (itself a hybrid of Villa Sarchi and Timorese), with that offspring crossed again with the stable, high-yielding Villa Sarchi variety. The result is a genetically rich tree with high resistance to rust and disease that produces around 40% greater yields than traditional varieties—whilst its close relation to Sudan Rume gives it strong potential for high cup quality and distinct flavour when grown carefully.
THE PROCESS
The Natural process at Fincas Los Rodríguez involves:

This fermentation-free drying method allows moisture to leave the cherry whilst sugar stays behind, building the sweetness that defines this lot.
THE CUP
Amaretto sweetness leads the cup, layered with ripe strawberry jam and dark plum, with a character that's slightly boozy but very clean nonetheless. A distinctive, fermentation-free natural from Pedro Rodríguez's Fincas Los Rodríguez, showcasing the flavour potential of the Ethiosar varietal when grown carefully and meticulously.
