Roaster notes

Grown by Rogelio Espinoza, this Java variety showcases the best in Colombia’s clean, complex and fruit-forward profile.

Expect a cup that’s beautifully balanced and juicy, with tasting notes of cherry juice, wild strawberries and lemongrass. Subtle florals meet ripe, red fruit sweetness — a standout example of anaerobic natural processing done right.

Flavour Notes: Cherry Juice, Wild Strawberry, Lemongrass

125g Box.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

About this variety

Java can feel floral and refined in clean washed coffees, while natural and extended-fermentation lots can become fuller and more tropical. Roaster tasting notes across the reviewed coffees include jasmine, mandarin, white peach, pineapple, red fruit, molasses and wine-like sweetness. The individual coffee's process and tasting notes remain the sharper guide.

Why this one is different
  • Colombia
  • Huila
  • Honey

Colombian Java can be floral and citrus-led when washed, with jasmine, mandarin and white peach appearing in roaster notes. Natural processing can produce a fuller expression with pineapple, wine-like fruit and rum-like warmth. These contrasting coffees show why the individual process and tasting notes matter more than one fixed profile.

Honey or pulped-natural processing often adds roundness and sweetness while keeping some of the fruit definition of a washed coffee.

A little background

Java is an introduced variety in Colombia and is grown by specialist farms including Finca Potosí and Jardines del Edén. Its Ethiopian landrace background can provide structure and aromatic lift, while Colombian growing conditions and producer-led processing shape the final expression.

Identification note Java grown in Colombia should not be expected to taste like an Indonesian-grown Java. Farm conditions and processing provide more useful cup context than the variety's name.

Classification Ethiopian landrace selection

Technical lineage An Ethiopian landrace selection introduced into Colombian cultivation.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
