INTRO

From the founding farm of Café Granja La Esperanza — Finca Potosí in Valle del Cauca, and the birthplace of a processing method born from adversity. Tres Dragones — Three Dragons — takes its name from the three large mechanical dryers whose flames visibly flare during the initial drying phase, giving them the appearance of fire-breathing dragons. Big, boozy, and juicy, with an unmistakable identity. In the cup: rum and raisin richness and dark cherry depth.

THE PRODUCER

Finca Potosí has been in the Herrera family since 1945 — the founding farm of what has become one of Colombia's most celebrated and internationally recognised specialty enterprises, Café Granja La Esperanza. Originally producing Caturra and Colombia varieties, the farm expanded its portfolio in 2018 to include Geisha and Sidra, and has long been a hotspot of processing experimentation, an early leader in innovation at origin across the Valle del Cauca.

The Tres Dragones method emerged from a moment of hardship — a fire destroyed one of the mills on Potosí farm, prompting the Herrera brothers to rebuild around three large mechanical dryers. Rather than simply replacing what was lost, they redesigned the entire processing setup around the dryers' unique capabilities, creating a method that has since become one of CGLE's most celebrated and distinctive signatures.

The Colombia varietal is a Cenicafé development from the mid-1980s — a hybrid of Caturra and the Timor Hybrid, combining rust resistance with improved flavour potential. At 1,860 MASL in Valle del Cauca, and under the Tres Dragones protocol, its inherent body and sweetness are amplified into something genuinely extraordinary.

THE PROCESS

The Tres Dragones Natural process at Finca Potosí involves:

🍒 Hand-picking — Colombia cherries selectively harvested at peak ripeness 🌡️ Low-temperature controlled fermentation — Whole cherries fermented at a low, controlled temperature for approximately two days 🔥 Mechanical dryer drying — Transferred to the three mechanical dryers — fired up by flames — and dried at around 40°C for a further two days ☀️ Open patio drying — Moved to open patios for a final 15-day drying period until optimal moisture content is achieved

The three-stage processing is the defining approach — the low-temperature fermentation builds the deep dark fruit character and boozy complexity that define this lot, the mechanical dryer's heat and airflow lock in those compounds rapidly and intensely, and the final 15-day patio drying stabilises and completes the profile. The result is an effervescent, big-bodied cup with a layered sweetness and an unmistakable identity.
