INTRO

An experimental single-origin Catimor from the Lincang district of Yunnan — one of Black & White's most technically ambitious releases, built on a craft beer-inspired anaerobic yeast-washed fermentation process that transforms this underestimated varietal into something vivid, fruit-forward, and deeply memorable. In the cup: lychee candy, fresh white peach, wildflower honey, and oolong tea, with a structured mouthfeel and a refined, lingering finish.

THE PRODUCER

Yunnan province in southwest China has quietly emerged as one of Asia's most compelling specialty coffee origins — situated at altitude on the Yunnan Plateau, where cool temperatures, volcanic soils, and distinct dry and wet seasons create conditions surprisingly well suited to Arabica production. Lincang, in the west of the province, is one of Yunnan's most established growing districts and home to a growing community of producers experimenting with both varietal diversity and progressive processing methods.

Catimor — a hybrid of Timor Hybrid and Caturra developed for its disease resistance and productivity — has historically been associated with commercial-grade production rather than specialty coffee. The advanced processing behind this lot challenges that assumption entirely, demonstrating what precision fermentation can unlock from a variety rarely given this level of attention.
