ABOUT THE PRODUCERMarvin Carias purchased his first parcel of land in 1990 in the Las Brisas area of Jalapa, Guatemala. Over the years, he expanded his holdings, improved farming practices, and implemented shade management systems to protect soil health and biodiversity. Today, he not only operates Finca Las Brisas but also runs a wet mill where he processes cherries—both from his own farm and from his neighbors—to sell to Primavera Coffee, creating economic opportunity throughout the local community.
Coffee production has transformed life in Aldea Las Brisas: improved roads, schools, and healthcare now serve the area, supported by the success of local farmers like Marvin who invest back into their community.
PROCESSINGAt his wet mill, Marvin prioritizes sustainable water management with an innovative system of eight wastewater treatment ponds. Each stage purifies the water naturally, and by the time it reaches the final pond, the water is clean and recirculated through a pump system—dramatically reducing water consumption and protecting the surrounding environment.
After depulping, the coffee ferments for about 12 hours, followed by careful washing and sun-drying on patios, developing clarity and sweetness in the cup.
THE CUPOn espresso, expect a macadamia creaminess and gentle malic acidity, with notes of green grape and a lingering chocolate finish.
On filter, this coffee shines as a classic, comforting daily brew — nutty, smooth, and softly sweet, with milk chocolate and crisp green apple tones.
